Simple, quick and fresh; this is a meal ready in about 15 minutes!
Put the pasta water on while you're steaming the spinach, and this meal should be ready in about the time it takes to cook the pasta!
INGREDIENTS
spinach
pancetta
chilli
garlic
white wine
2 eggs
ricotta
nutmeg
pepper
olive oil

METHOD
Wash the spinach and steam it in a covered pan - remove it when it's wilted and drain
Heat water in a pot for the pasta, when it's at a rolling boil, add the pasta and turn down to a violent simmer! Cook as per the timing on the packet
In the frying pan heat some olive oil
Add the pancetta, garlic and chilli
Meanwhile, finely chop the spinach
Add the spinach to the pan and stir through
Add a glass of white wine and leave to simmer
Break the two eggs into a bowl or jug and whisk to a froth
Add two tablespoons of ricotta and beat in with a fork until creamy
Add nutmeg and pepper and mix through
Add some of the pasta water to the pan with the spinach and pancetta
Drain the pasta and pour into the pan. Mix it through thoroughly
Remove from the heat and pour in the egg and ricotta mix
Stir it through thoroughly
Serve with grated parmesan or toasted breadcrumbs
