A really popular dish - and SO EASY!
Arrabbiata is a tasty, spicy sauce from the Lazio region. It means angry - hence the chillies! All too often restaurants will have chicken, mince or goodness knows what ready to pop in - proper arrabbiata has no meat - and it needs none. Just a few ingredients and it is as tasty as it is spicy!
INGREDIENTS
onion
garlic
crushed, dried chillies
passata
basil
penne

METHOD
Finely chop the onion and garlic
Heat a good amount of olive oil in a pan
Add the onions and garlic
Once they're softened and - as they say - translucent (?) - 10-15 minutes later, add the chillies
Stir, stir, stir
Add the passata and stir, stir, stir
Add the basil leaves and...
yes - stir, stir, stir
Cook it down for 20-40 minutes (Altogether now... the longer the cooking, the deeper the taste)
Cook your pasta of choice for the length of time on the packet
Drain the pasta and tip it into the pan with the sauce.
Stir, stir, stir!
Serve with grated Parmesan or Pecorino
