A hearty, warming stew made with Italian sausage and green lentils, but your local butcher's sausages would do just fine.
It's winter! This is a traditional hearty Italian stew made with sausage and lentils. If you can get [proper] Italian sausage - so much the better, but if not - give it a go with your local butcher's sausage, or what you can get at the shops.
INGREDIENTS
sage
thyme
bay leaves
potatoes
onion
garlic
sausage
tinned green lentils
chicken stock (or whatever stock you have - or just water)

METHOD
Chop the onion and slice the garlic
Dice the aubergine
Cut the potatoes into chunky chunks
Heat some olive oil in the pan
Fry the sage and thyme leaves
Add the potatoes
Give them a stir and a minute or five to absorb the herbs
Add the onion and garlic
A good stir
Add the chopped sausage and bay leaves
Stir through and add some salt and pepper
Empty in the lentils - with their liquid
Give it all a good stir and cook for about 10 minutes
Add about 500ml stock and simmer for 40 minutes
