You don't have to be a lazy vegan to cook this, but if you are...
I'm not suggesting vegans are lazy; nor am I suggesting if you are lazy then vegan food is the best option.
However, if you're too busy to put in too much effort (or - yes - too lazy), but have time to stick something in the oven - this is the dish for you!
Tasty, simple and really really involving little to no effort.
INGREDIENTS
tinned chick peas (or whatever beans you might have)
tinned tomatoes (if they're whole, give them a good seeing to with a fork)
onion
aubergine (courgettes would be nice)
za'atar*
honey
olive oil

METHOD
Set the oven to 180ºC
Chop the onion
Dice the aubergine
Open the tins... (hmmm - it's asking a bit much)
Onion and aubergine into a casserole dish
Sprinkle with za'atar
Chick peas and tomatoes into the casserole to cover the chopped veg
Sprinkle with za'atar
Dot with blobs of honey
In the oven for 40 minutes
*Za'atar is a blend of spices and herbs. You can find it in most supermarkets nowadays, but if you're keen - and not that lazy...
Oregano, marjoram or thyme, cumin and coriander, sesame seeds, salt and sumac
