Huevos Picantes

Spicy smothered eggs and crispy halloumi on toast. A spicy way to start the day.

Smoky chorizo, tomatoes, fresh herbs and chill with a lovely fried egg hidden below. all laid on strips of halloumi resting on hot toast. I used a thick slice of soft white loaf for this one.


This is the way to say ¡buenos días! to your taste buds.

 

INGREDIENTS

sliced chorizo

1/4 tin of chopped tomatoes - or more if you'd prefer

garlic

chilli

parsley

paprika

a fresh egg or two

METHOD

  • Put the chorizo into a hot pan and let the oil start to come out

  • Add the tomatoes, garlic and chilli and stir through.

  • Make a well in the middle of the pan and crack your egg(s) into it

  • sprinkle the parsley over the eggs and carefully spoon some of the tomatoes mixture over as well.

  • Cover for about 3 minutes - or however you like your eggs - experiment!

  • In another pan, heat some olive oil and add two slices of halloumi per serving.

  • Cook until they are browned and crispy on both sides - you'll need to turn them to get both sides crispy - about 2 minutes a side

  • While the halloumi is cooking on the first side, get the toast on.

  • On a warm plate: toast, topped with halloumi slices, topped with the hidden egg. Dress the rest of the tomato & chorizo around the toast.
